Claudia Rose Emerson is an advocate of animal rights and liberation. It was a flyer with a photo of a downer cow she was handed in Greenwich Village, New York City that opened her mind and heart about non-human animals. The cow laying on the ground was too sick to stand up and was going to slaughter for food. It was then she became vegan and began handing out flyers herself to plant a seed for others to speak out against the cruel treatment of animals. Emerson began an animal rights group "Heart for Animals" and held protests to be the voices for animals. Emerson has used her art to speak out for animals. "In every part of life, animals are exploited for profit and greed" and she wants to show "the beauty of animals and the respect we owe them for their existence alone." Hand-cut stencil Prints, Oil, Watercolor and Collage are some of the mediums she uses.

Baked Goods

To be sure, it’s an unusual recipe. Take one land-use lawyer, combine with a computer science teacher and his stand-up comedian brother, stir in one well-established political consultant and then mix it all together with a commitment to great food and social justice, and what do you get? V-SPOT ORGANIC – the newest addition to the East Village’s still-cutting edge restaurant scene- located at 12 St. Mark’s Place in Manhattan. V-SPOT’s story is unusual, if not unique. A Brooklyn start-up that came into existence to fill the vegan void in Park Slope’s restaurant community, V-SPOT quickly built a loyal following by offering locally sourced Latin-vegan cuisine that refused to sacrifice flavor. Nine years later, V-SPOT is now following the reverse path of most restaurants, maintaining its Brooklyn flagship while expanding into Manhattan’s Lower East Side with a new ORGANIC restaurant.
